Groundnut flour is produced from crushed groundnuts, either fully or partially defatted. Depending on the fat content removed, it is exceptionally rich in protein, providing up to 52.2 grams per 100 grams. Culinary professionals utilise groundnut flour as a thickener for soups, and as a flavour enhancer and aromatic ingredient in breads, pastries, and main courses.
