For human consumption, hulled fonio is a staple in many African recipes, including couscous, porridge, dumplings, fritters, and bread. Its nutritional value is comparable to rice. Compared to other cereals, it contains more carbohydrates (84%), less fat (4%), and less protein (10%), but its methionine and cystine content is particularly noteworthy. Studies have also explored fonio's properties for individuals with diabetes.
